Toddler-Friendly One pot Broccoli Cheddar Pasta

The one-pot Broccoli cheddar pasta is a fail-safe toddler recipe that only takes 15 mins to make, healthy and delicious.

Ingredients
  

  • 1/2 cup small elbow macaroni pasta (for babies 6-9 months use bigger size pasta)
  • 1 tbsp butter
  • 2 garlic pods, minced
  • 1 tsp oregano
  • 1 cup low sodium vegetable broth or any broth of your choice
  • 1/2 cup milk of your choice, I use whole milk
  • 1 cup broccoli florets, chopped
  • 4 slices Cheddar cheese. I use Cabot brand white or yellow cheddar cheese

Instructions
 

  • In a saucepan or dutch oven, melt butter in medium flame, add garlic and stir until they are golden brown. Stir in oregano, vegetable broth, and milk. Bring it to boil
  • Add pasta, reduce heat, cover the pot and refer to package directions for the cooking time, occasionally stir to avoid pasta sticking to the pot. Once the pasta is semi-cooked, stir in broccoli florets.
  • Add the cheese before you turn off the heat. Serve hot with a choice of protein on the side.

Notes

Storage Instructions
Refrigerator- Store it for 2 days in an air-tight container
Freezer- Avoid adding cheese at the end, transfer it into a freezer-safe airtight container once it's cool, and store it for 3 months. 
Alternatives
You can also add grated carrot along with broccoli and make it only with carrot, it tastes equally good (carrot adds a bit of sweetness, it's more yummy)!
